Chef Katsumi Kusumoto is a worldwide chef, renowned to those in the know. He changed course from French cuisine to washoku, and opened his first restaurant, called “Kusumoto”, a members-only restaurant 自由が丘 居酒屋 in Nishi Azabu. VIPs from many countries and global artists went to Kusumoto for his washoku. Even after his restaurant closed, many people were still looking for washoku prepared by Kusumoto.
Ichigeya is a kominka cafe located within walking distance from Hase Station. The area is packed with visitors who come to see Kamakura Great Buddha, but this cafe is located in a calm, quiet side street. Take off your shoes at the entrance and sit on a cushion in a tatami flooring room, and you will be able to enjoy a view of the garden from the veranda. When it comes to Tokyo, many people probably think of skyscrapers and crowded trains. However, there are many places around Tokyo where old-fashioned scenery still remains.
Although located in Jiyugaoka, this Japanese-style cafe set within an old house has a pleasant rustic charm. This is a café where you can enjoy freshly made sweets and Japanese tea. One of the representative fish of "Jobanmono" caught off the coast of Fukushima is the sashimi. A style of sashimi wrapped in boiled sashimi made from skin and eggs. In order to fully enjoy the white meat of the flounder without soy sauce, the boiled seasoning was purposely seasoned with a rich flavor. The liquor to be matched is "Hirotogawa Junmai Ginjo" by Tenei-mura Matsuzaki Sake Brewery. It is a sake that goes well with sashimi and has a gorgeous flavor as well.
One of the attractions of the store is the abundance of tableware and sake bottles. Hot-air pots are sometimes offered in the "Uguisu Sake bottle," which makes a tingling sound. Quickly fried such Kawasaki Mamoru chicken breast meat and served with rape blossom sauce with a spring scent. The rapeseed sauce has the sweet taste of onions and Saikyo miso. For the first time, I visited the Kawamata Agricultural Promotion Corporation, which deals with Kawamata Chamo, with the president of the Jiyugaoka era who wanted to use local ingredients.
