The Wine All fruit is harvested by hand and fermented spontaneously in a combination of stainless steel and open-top wood fermenters. We import and distribute a collection of artisanal French wines, lovingly hand-selected for their ability to add conviviality to any occasion. However, the story is somewhat complicated by the fact that the communes of Corton-Charlemagne and Chablis also produce Grand Crus (likewise 100% chardonnay). These are less powerful and rich than those of Puligny and Chassagne, but do have great length and a minerally purity to their make-up. All these characteristics are as true of high-quality Australian pinot noir as they are of Burgundy. The result is a wine of great complexity, one of the very best in the appellation. The wine is rich in blackcurrant aromas and with plenty of tannin.

Bin 150 is a stylish and contemporary shiraz born from the ancient soils of Marananga, while Bin 138 is a plush and approachable blend of shiraz, grenache and mataro. The translation of Pinot Noir from French to English is pine and black. Pine refers to the pinecone shape of the grape bunches and black, to its colour. Whilst not really black, the descriptor gives some relativity to its cousins, Pinot Gris (grey/pink) and Pinot Blanc (white/yellow). Following nine months in oak, the wines were assessed and blended, then returned to barrel for a further nine months prior to bottling. A long, cool ferment in stainless steel tanks, minimal fining and the use of screw caps are all further steps towards capturing the inherent delicacy of this cool climate variety. An intense nose of black cherry and strawberries supported by complex hints of liquorice and vanillin French oak. In an effort to preserve Pinot noir's subtle complexities, this wine has been bottled unfined and unfiltered. This Pinot noir was fermented in small batches with twice daily plunging of the "cap" formed by the grape skins.
Sofitel's on-site restaurant Garçon Bleu can be found on level nine. The team, led by chef de cuisine Gianni Delogu serves up modern French fare with a touch of drama. Kick things off at the bar with a glass of bubbles and crisp whitebait, before perusing the wall of wine and making your way to a table with a bird's-eye view of the city. The fit-out is classy but there's nothing stuffy about the delivery.

But over the next 5–10 years, the colour turns to a glowing yellow-green, the aroma and flavour to honey and butter on lightly browned toast, all the while kept fresh and bracing by its acidity. The main river in Bordeaux is the Gironde and its Left Bank vineyards are dominated by tannic Cabernet Sauvignon wines, whilst the Merlot-focussed Right Bank wines tend to have more restrained tannins. None of the Bordeaux wines is 100% cabernet sauvignon, which is made extensively in Australia and California’s Napa Valley. But if you compare an Australian cabernet sauvignon with a Haut Médoc or Graves wine of similar age, the Australian wine will be smoother, less tannic, and have more obvious berry fruit flavours. On the other side, the French wine will have more complexity and structure conferred by the terroir and climate, and expressed through the tannins in the wine.
